BEER BATTER              Simply take  complete pancake batter mix and add a beer till a thin batter is made, set aside it will thicken more as it sits. Test it and thin more if needed. Take fish fillets and dredge in a mixture of 3/4th flour and 1/4 cornstarch plus salt pepper and garlic powder. this will season the fish and make the pancake batter stick. Grease should be at about 300 to 325 degrees.  Don't have grease too hot fish will not cook through and outside will get too dark. Cutting fillets into smaller size pieces helps a lot. Dip the dredged fillets into beer batter and deep fry till done. Don't overload the grease with fillets. When cooked place on paper towels to drain excess grease. Searve with tartar sauce.
