Wisconsin Style Poor Man's Lobster
Need Northern fillets, Butter,mild melting cheese your favorite, Lemon juice, garlic salt or powder salt and pepper. (old bay seasoning optional)(dill optional)         In a 5 quart kettle half filled with low boiling water add juice of 1/2 lemon or about 1 Tablespoon juice, add garlic, salt and only a pinch of old bay if using.  Lower fish 1 or 2 pieces at a time into boiling for 1 minute or 2 till about 2/3 cooked. (Don't over cook it will fall apart) pull fillets out drain well, then place in butter greased baking pan, ramekins work great. Add salt, pepper, pat of butter  to top of fillet and cover with cheese.  Place in oven 3 or 5 minutes till fish finishes cooking and the cheese melts turning golden brown on the edges.  My favorite cheese to use is Havarti for its buttery mild flavor but Mozzarella works great too.   Serve with drawn butter.
