WALLEYE PIKE  is considered the premier fish of the north.  It can be pan fried , deep fried,  coated or not but my favorites are grilled and beer batered. To grill, deep the towel dried fish into butter and then onto a fish grate. Season with salt pepper and a little garlic salt.  Put on grill, flip in 3 minutes or so, and watch close it doesn't take long to cook, and the butter sends up flames nicely searing the fillets.  USE a grate... placing fish in a pan on grill isn't grilled fish , it is only pan fried on open fire.                                                             Beer batter recipe on bass page
